性质
白色或略带黄白色结晶或结晶性粉末，无臭，稍咸；干燥状态下稳定，吸湿性强；较卜抗坏血酸易溶于水，其溶解度为62%(25℃)，78%(75℃)；极难溶于乙醇；遇光颜色逐渐变深。2%的水溶液pH值为6.5~8.0。其抗氧化作用与L-抗坏血酸相同。1gL-抗坏血酸钠相当于0.9gL-抗坏血酸 [1] 。
安全性
与L-抗坏血酸相同。大鼠经口LD50大于5g/kg。FAO/WHO(1994)ADI为0～15mg/kg [1] 。
应用
与L-抗坏血酸相同。在不适宜添加酸性物质的食品中可使用本品，例如牛乳等制品。另外，对予肉制品还可以作为发色助剂，同时可以保持肉的风味、增加肉制品的弹性。据一些研究证明，抗坏血酸、抗坏血酸钠对阻止亚硝酸盐在肉制品中产生有致癌作用的二甲基亚硝胺具有很大意义。其添加量为0.5%左右 [1] 。
